Knife Sharpening

I have a reasonable set of JA Henckels cooks knives which are well overdue for a good sharpening. I suspect they have been used for purposes besides cutting food, and the cutting edges have started to develop some serrations. They are well past the point of a steel being effective.

I am looking for a knife sharpener who will use a block stone (ie manual action), rather than mechanical sharpening with a grindstone.

Mrs spratt tells me there is no-one in Ban Dung, so I need to look further afield, to Udon.

Not being able to come up with anything sensible, can I suggest you use the electricity meter in Eddies Sports Bar when his Karaoke machine is running :D

I remember seeing a guy sharpening knives next to Ban Huay Market. He sits on the south side of the market where the cars park next to the temple wall, he uses a block stone to manually sharpen knives.

Thanks Lee - will have a look next time in the big smoke.

Eddie has disabled his electricity meter - he considers it a distraction, and he says as an added bonus, his power has become a lot cheaper. :D

Jack, why don't you pick up one of those stone things for sharpening knives and have a go at doing it yourself - I doubt if it's that difficult - might be a bit tedious though. I got one of those round pole type sharpeners with a handle on the end which you just run the knife along from time to time which seems to do the job.
I still get the problem, similar to yours with the blade being dinked which the knifes do on there own whenever I ask who was responsible.

o-t (ever helping the community :D ) I understand what you are saying.

But for the price that I expect these guys (or gals) will charge for doing a professional job, verses my buying a stone and lubricant, plus the effort of actually doing the sharpening, I too am happy to help the community. \:D/

I bought the knife set in China a number of years ago. There were a couple of really old guys in a hutong close to where I was living to whom I would take the knives every year or so. They would sharpen them to a razors edge (testing by actually shaving their cheek (face). I wouldn't have to touch them (the knives) again for another 12 months.

Hopefully I can find the same here - and then put them in a place where they can't be used for cutting sheet iron, or chopping up small branches for firewood. :D

the only thing you don't have to do is to give your knives to people who pretend to sharpening them in the street. They will ruin them for ever
